Developed in 1874 near Colby, Wisconsin, Colby Cheese is known for it's mild tender flavor. Often compared to a cheddar, Colby is milder and softer. A great cheese for melting and topping. It will pair with just about anything. Try it with hamburgers, chili, apples and salads.
